About

What is Aipim? Aipim, also known as mandioca or macaxeira is Casava, a famous Brazilian root spread by the Portuguese conquerors around the globe. It’s a staple in Brazilian culinary since always, as many indigenous tribes were domestically cultivating it all around the territory many years before Portuguese arrive.
You will find something made of cassava in every Brazilian table: boiled cassava, tapioca flour, toasted cassava flour, farofa, cheese bread, tapioca crepe and many other things.
This is why we choose that name, Aipim, for our project. Aipim is born of a genuine desire of two Brazilian friends – Leiliane and Valentina – to understand, explore and share what is Brazilian cuisine in foreign lands. A wish instigated by the growing interest and appreciation of food and culinary as a cultural aspect. Also by the intense research movement on the formation and evolution of Brazilian cuisine.
Aipim arrives to unveil the history of Brazilian cuisine.
